Modha (Barramundi) Fish Head Curry Recipe


4 tbsp Cooking Oil
5 Garlic Cloves
1 Big Onion
1 tbsp Salt
1 tbsp Fennel Seeds
1 tbsp Mustard Seeds
1 tbsp Cumin Seeds
1 tbsp Turmeric Powder
Curry Leaves
1 Cinnamon Stick
7 Red Chillies
4 Small Onions
4 Ladies Fingers
3 Tomatoes
1 tbsp Tamarind Extract
1 tbsp Jaggery
3 Coconut Milk Cups
1 Modha Fish Head


Step 1
Into a pan add 4 tbsp of Cooking Oil and let it heat, then add 5 cloves of Garlic, 1 chopped Big Onion, 1 tbsp of Salt, Fennel Seeds, Mustard Seeds, Cumin Seeds, Turmeric Powder. Add Curry leaves, Rampe and Lemongrass then saute for few seconds. Then add 1 stick of Cinnamon, 7 red Chillies, 4 small Onions, 4 sliced ladies fingers and more Turmeric Powder.

Step 2
Finally add 3 medium cut Tomatoes, 1 tbsp of Tamarind Extract, Jaggery, 1 cup of Coconut Milk and mix for few seconds. Then 2 more cups of coconut milk and MIX MIX MIX! Now let it simmer. Gently place the Modha Fish Head and then add the gravy on top until the head is evenly coated. Put the lid on and let it cook for few Minutes and voila!
