Recipe – Mediterranean Barramundi Stew
200g Muhudu Modha
1 tbsp Olive Oil
1 tbsp Salt
2 Cloves Garlic
25g Big Onion
1/2 Cup of Water
Heat Olive Oil in a Pan. Add Salt & place the filets. Saute the Barramundi fillets skin down until it crisp. Turn over & remove the fillets from the pan.
Add chopped onion, fennel & garlic to the pan and let it fry. Then place the filets on the pan & add some chopped tomatoes. Add Tomato Puree & 1 cup of water and let it simmer. Add Bay Leaf, Rosemary, Star Anise & Orange Peel. Cut potatoes into small cubes & add to the pan and let it simmer for 10 mins.
